My school also employs them and the way they are environmentally friendly is by recycling their food in the most ridiculous way. eg, leftover spaghetti meat sauce as taco filling, sloppy joe meat at taco meat, etc...I could go on an on.

Bon Appetit is the service employed by my university. I'm so proud. Not only is the food tasty and the team very nice, but it's (relatively) environment-friendly. ^_^
