Many pros prefer the alloy sterring, because if they crash there is some opertunity that the bar or stem cracks. And then its better to have something more solid. The bike also need to weight 6,8, so theres no reason to use lightweight bars, and carbonstems are only for the looks. Most top model alloystems are lighter. Except if you buy a expensive AX lightness wich Fabian would destroy just by using it ;)
