when you fight u get more adrenaline which makes you stronger and its a need in certain situations not a desire.

SO think of Super Saiyan as a more powerful adrenaline boost that cant be unleased untill its needed .

e.g when you get angry u become stronger and infuriated.

The saiyans are alot like humans with there ability such as beoming stronger after near death or training( we do xept the death part i think.
