But then you just have melted chocolate between two pieces of soft, warm bread. It doesn't have the added texture that makes it extra delicious.

If you don't want to fry it, you can put it in the skillet without butter. It will brown and become crunchy either way, but the butter is used to speed up the process and add another dimension of flavor.
