I know that this video is a bit older but I just got into chainmail and figured I'd comment for those that might have questions. If you were to connect the links in the middle it adds much more rigidity. I just made myself one and came across this after. My cube I connected the links in the center and it holds its shape very well.
That's a good question. I pretty sure you could get away with not connecting the center ones, but they do add some weight to it, It's really the builder's choice :)
