Last night Film 4 screened The Director's Cut of Kingdom of Heaven.
Compared to what I bought on dvd a few years ago, the Director's Cut is far better because I can now appreciate why Ridley Scott wanted to make the film at a time when Muslim and Christian relations were somewhat strained.

not sure about the song man, but i can tell you the kings are Baldwin king of Jerusalem and Saladin sultan of egypt. the castle is kerak and the 'fat evil man' is Reynald de Chatillion
