Pho Tutorial Number 1: You should never kill a bowl of Pho with spoonfuls of Rooster sauce.

It's OK to mix that stuff with hoisin sauce and use it as dipping for the beefs.

Yes. There are correct ways of eating phở.:-) The Northern way, and the Southern way.

The Northern way, by which many Northerners considered to be the orthodox way of enjoying a bowl of phở, is to saturate your senses with its aroma and tastes as is, sans MSG and other "weird" condiments. Of course, the natural thing when eating phở a la "Northern style" is you have to absolutely trust the chef.

2. The Sorthern way is to make full use of the herbs plate given to you by the restaurant. Most southerners add to their phở a few leaves of Thai basil, saw tooth coriander, some bean sprouts, a dash of hoisin sauce. The aromatic combination of the herbs will give your bowl of phở a new dimension. Be careful with the bean sprouts(an invention the South to cool down the boiling hot soup), too much of it will dilute the broth, making it bland to the taste.

Why twist the noodle around like that ? That would make the noodle pack together as a solid piece. Eat Pho correctly will make your taste better. Use Chopstick for the noodle and spoon for the soup
