@Strikesnake1994 That aimless flopping around is fairly normal if you're measuring fitness based on maximizing net upward movement ("MAXH" in the program). Once a creature gets one good jump, nothing it does after that has any effect on fitness, so it tends to just flail about.
The creatures that jump repeatedly and consistently tend to come about in runs where fitness is based on distance traveled. For whatever reason, a jumping strategy is the most commonly evolved type.
For that you need to go into one of the folders and replace some image files. I can't recall which folders and files, but if you PM me I can let you know. The ground is green_floor.png I think, but I'm not 100% sure. If you see a file like that, try replacing it with a different .png image and see what happens (if that fails, be sure to put the original back)
My project website has links to a bunch of similar projects on the web. I don't recall whether any of those are simultaneously both freely-available and containing water physics, but it might be worth a look.
No. From the couple times I've seen it land on its back (so far always on flat terrain - not its "native" ancestral habitat) it's doomed when that happens.
why "evolved"? What has this to do with evolution?

I prefer virtual creatures that resemble actual animals (like this one), not just a random jumble of blocks

So far the funniest one I've had on this thing is two identical ends attached in the middle that both wanted to go in separate directions :L.

I'm not usually a fan of the jumpers that come out of this (too boring), but I really like this one.
