Because if you took a biology class you'd know that Creutzfeldt Jakob disease (in layman's: Mad cow) is a genetics disorder of the prions from eating contaminated meat. Tay Sachs is a recessive genetic disease (not enough characters available to explain this complicated concept to you) and has nothing to do with Mad cow.

@redfordforpresident You do realise that Judaism actually supports vegetarianism, one of the only religions to do so? Meat-eating was permitted after the flood, when there wasn't enough plant-matter to sustain human life. Permitted, but not encouraged. The idea of Kosher butchery was to minimise pain.
