One additional thought, after sharpening the knife you must clean off the blade to remove any residue left on the blade from the stone and the steel, else it will transfer onto your food - otherwise, great video!.
Great vid. One issue though, he let his pinky finger drop into the knife cutting line when doing the horozontal dice cut. Other than that great demo for those not familiar with basic knife skills/saftey.

@jonh387 go find a cafeteria to work at that cooks with fresh veggies. See if you can get a job cutting veggies. They'll show you how. A cafeteria should give you lots of practice working with a large volume. Get good at the basics. And once you're good, then get really good.
