Due to the natural heat retention and depth of the stone, the heat input into the stone is dissipated only very gradually meaning that you will have a sizzling hot stone for 20-30 mins and a suitable cooking heat for around 30-40 mins. Due to the dry, searing nature of the heat it does not cook through the produce too quickly.
