1) Chop or crush the Garlic 2) Add/sautee shredded carrot istead of adding sugar 3) don't add so much salt at once, maybe 1/2tsp at a time 4) she had red wine sitting on the counter and didn't use it in the sauce!

I don't understand about reducing the acidity by adding sugar to the past sauce.......can someone please explain to me?

@akasha85 its so that your sauce doesn't have a strong acidic flavor and when you add the sugar it doesnt make it sweet it balances out the flavor
