  • What's "the recipe" that Koffman mentions at 1:04?

  • @redetrigan Pig trotter i think

  • can someone tell me if thats really gordon ramsay in the beginning?

  • @williamswei1990 Tis the young and shy Gordon Ramsay.. shocking huh

  • @Godinezj07 thank you for the clarification. i am shocked!! :O but does that make marco gordon's teacher then?

  • @williamswei1990 yep. In other words, Gordon was Marco's bitch back in the day. hehe. Genius chef.

  • @uberathlete hahaha, he trained his bitch well XD

  • @williamswei1990 Yes, yes it is.

  • I just saw Gordon Ramsay cooking right next to Marco!

  • what kind of meat is that? "sweet breads" ?

  • @sequoiababa that stuff is calfs brains

  • @thenighttraincometh No it's not, it can be pretty much any other organ except the brain.

  • @sequoiababa it's a gland that calfs have and disappears as they grow older. It's situated around the throat

  • @sequoiababa It's the thymus glands typically harvested from veal (young male cows).

  • i miss my lover. he's french

  • 0:05 - Easy on the vodka there, Gordon, lol! xD

  • I wonder how many times Marco banged old Kay baby?

  • I wish Marco made more cooking vids. Hell I even enjoy his Knorr vids. When I watch him cook, I feel relaxed. Same thing when I watch Pepin, and even Child. When I watch Gordon cook I feel freakin stressed.

  • @uberathlete excellent comment

  • Haha ''I look rough as fuck!''

  • Marco's approach: "You've got to capture elegance"

Gordon's approach: "get it on the fucking plate you fucking pathetic moron"

I know who I'd learn more from, and therefore who I'd prefer to work with: MPW FTW!

  • To the people saying its dated, well the food it self is not dated its classic french cuisine, now as to the plating and the plates themselves yes it's dated now, but at the time this was ground breaking stuff, still Marco Pierre White G.O.A.T!

  • This is a film version of White Heat, the dishes all the way down to the quotes are all in the book

  • This is amazing seeing Gordan Ramsey assisting in the kitchen as a sous chef for MPW! Amazing! Greatness in the making!

  • "The food looks dated" Lololololol, this programme is 22 years old, if you watch the very end of part 3 you will see (it disappears very quickly so you may have to pause it) -

    © Thames Television PLC MCMLXXXIX

(which is Roman numerals for 1989)

  • 5:53 are Marco's fingers dirty when he was plating??

  • Comment removed

  • I was waiting for Koffman to call Marco his padiwan.

  • It's so funny seeing Gorgon Ramsay back when he was Marco's bitch. I think more people need to see this video :P

  • To everyone who says the food looks dated - how many $600 per meal restaurants have you been to recently?

  • I'm sure that food is delicious, but it looks so dated that I'm quite startled.

  • @Monumentum616 because the video is from long time ago smart one.

  • Now I'm an old codger of 40, and was 18 watching this the first time it was on TV, I realise that MPW being at this level at the age of 27 is a bit like talented law student becoming a High Court Judge - and deserving to be one. Not only that, but the best High Court Judge in the country.

He was incredible. Probably still is.

  • is that Gordon?! at 0:11 ?!!

  • @blackonecro wow,he looks funny..

  • @Doppleganger86 yeah he was pretty young at that time :)

  • I'm a heterosexual man.... and I have no problem saying young Marco was as sexy as they come.

  • @Liberum sorry buddy but that's a pretty gay statement.

  • Young Gordon Ramsay at 0:05!

  • I agree, Marco is the source, Ramsay is a by product who capatalized on what he learned from the Chef.

  • that lady who speaks is really annoying

  • I'd go gay for Marco

  • Mad precision and perfection! Since this Marco has come down to earth, relaxed and cooks more simply but with love/feel and great experience...

Like he adviced some farmer in The Great British Feast: "cook your bacon in a microwave"

  • I have been a chef for 18 years .... it comes down to very hard work

think twice if you are work shy its tuff

  • I would LOVE to see more 80s shows with Marco...do you have any more?:)

  • Hey can someone help me? you all got better things to do huh? *no answer* WELL FUCK U THEN

  • Marco is so SICK, in a good way. He's one of those one of a kind people in their chosen field. There will never be another master cook at his level. Just like Muhammad Ali, Bruce Lee, Elvis. There will never be another one like them.

  • i the UK yes i agree with you

  • Taste Taste Taste.

  • @Geddaway

Further cemented it is. Is that really the best you can do? Really? Apart from claiming a right to be a fool, one I would never wish to deny you, you have nothing but a humourless crack regarding my English?

Purely out of interest, apart from the missing 'no' from my second reply, an error due to the hasty shortening to make the character count, to what deficiencies in my English do you refer?

  • @Geddaway

The last resort of an idiot. Yes, you have the legal 'right' to be 'wanky'. Any fool can express an uninformed opinion. Indulge in that right at your leisure. Just don't be so touchy when called upon it. Another tradition we have. (I assume you meant 'write' rather than 'speak' being as you've never heard my voice).

Furthermore, you're in no danger of being shot, merely shown up to any passing reader an as idiot. Feel free to continue on this path and further cement the impression.

  • @Geddaway

Yes, and I have opinions about your opinion. What right do you have to say of a master that his consideration of detail is wanky? What evidence do have that those considerations are separate from his mastery? If you have some greatness in the kitchen then perhaps you are qualified to dismiss them. I shall take a safe bet that you are in position to make such a claim.

An opinion without foundation is something you have a right to I guess, but what could be more 'wanky' than that?

  • Comment removed

  • @Geddaway

That's why we are spending the time to watch a 20 year old video of the man and you... well.

  • seriusly im a strong atheist but his talent cannot be anything else than godgiven:)

  • Love the intro :)

  • @TheShogun94 i do also,,its classic

  • What is the thing he puts over the dessert? Looks like caramellized sugar? the little Dome =)

  • @emilandersson91

yup, its a sugar dome- most commonly the caramel is poured over the back of a ladle to create the dome shape

  • The very definition of a split personality... but he is still the don. ^_^

  • i agree too because i used to really like gordan but marco what a legend think he should get his stars back

  • you can see Marco wanst as half as tough like gordon is today

  • Marco on Jamie

  • lol at young ramsey 0.05

  • Marco Pierre White is one of my Idols..But so sad to know that once that TV Crew went home to be with their loved ones, Marco was physically and mentally abusing his chefs day in and day out :(

  • @ddonald Couldn't have been that bad, Ramsey said that working with Guy Savoy was much worse than with Marco.

  • @TonyTriggers I actually thought that was Joel Roubchon.

  • When he calls out the orders at the beginning... he says "Savarj" What does that mean?

  • @SethHesio - It's "sommage" ....means 'new order in' , as in a summary of the new order.

  • @tremainiac Really? Cheers buddy... I feel enlightened. Always wondered what it was he said there.

  • I have to ask myself if this guy is where Anthony Hopkins got some inspiration for Hannibal Lecter's character. haha

  • @peeweesherman If you see MPW now... he looks just like Hannibal Lecter, it's quite amazing.

  • 5:52 nice dirty fingernails :)

  • i would make him a prime minister

  • I got a book for christmas and MPW's book was fantastic it's so simple it's unbelivable but unlike most chefs it's tasty and elegent at the same time!

  • when i first saw the thumbnail for this video all was thinking " Was kurt cobain a chef ? " ... i kid MPW people, im actually watching about this guy ever since ramsay had him on his show and said" What are fingers for ? FOR BURNING." ... i always wondered why cooking was hard and looked so easy, this guy is no help in answering that question.

  • @shrunkendunking watch knorr's web site

  • I love the way Marco seasons with salt.

  • Very nice decoration, but now its Cold!

  • Marco is God........ No one can take that away from him. Ramsey is a little vile fuck that swears too fuckin much. Go on my son

  • @pathpub

    so very true

  • @flappospammo what are sweet breads

  • @hallnoats4ever

    something you lack

  • @hallnoats4ever

wow , mr internet tough guy strikes again

    dork

  • @hallnoats4ever brains

  • Damn! Gordo must have been a hug Flock of Seagulls fan!

  • good looking boy is he he shudve been a rock n roll star and his co

king is nae bad either lol

  • consider the 100+hour work weeks for 10 years straight with the stress he has endured and you'd understand why he looks the way he does haha

  • get the salad gordon! hahahaha come a long way since then eh!

  • Anybody got a hair-net? That's disgusting.

  • @br8d1 3 Starred Disgusting

  • @MrNiceHk Does that really impress you? I am not fighting. I am seriously asking. Unlike other douchebags who will say their resume, I will just say, I cook on the top. It is quite often that I watch 'kitchen entertainment' shows, and I can find 20 things within camera view that would unquestionably and undebatable result in the loss of a star. I know what it takes to get a star, and to keep it. So, he could have 100 stars, doesn't matter, he is shit if he cant even maintain basic sanitation

  • @br8d1 My God Man its Marco Pierre White if you as you say know what it takes to get a star surely you must know how supremely difficult it is to get 3, this is a cook program for TV, perhaps a little more attention on the food and not window dressing. Three Michelin Stars does indeed impress me and if it does not then might suggest you get out of cooking. You are watching one of the best chefs who has ever lived cook and you are complaining about his hair, something is wrong with the picture :)

  • Comment removed

  • To be a Chef it's a life choice. You must commit to that way of life. This program is fantastic, Marco is a genius. I truly believe that. I have no doubts that he is probably an absolute cunt to know, but he is astonishingly good at his craft. Best British Chef of all.

  • "Taste! Taste! Taste!"

  • i love marco.as a chef he is a great inspiration to many, many young chefs out there.i have noticed alot of people commenting on how ramasy is a poor chef.people are you fuckin serious??if gordon is such a "poor" chef, and is only known for his kitchen antics, and his tv shows, then why the fuck does he still run ONE OF ONLY FOUR 3 STAR restaurants in the entire UK?grow a brain, and grow the fuck up.im sick of people who know only what is shown on tv about the restaurant industry.fuckin fools

  • well if it wasn't for all the shit he put is chefs through would they be as successful today? and its all down to him that these chefs like stephen terry and ramsay are making their way and making names for themselves

  • Does anybody understand what Koffman is saying at 1:04 ?

"Marco, I knew you when he came to L'atante Claire he was (something). But he worked very hard for it and I liked that."

What's the *something*? Sounds like, "for the recipe."

  • chefs move around.,,.,thats life..

some enter your kitchen for `recipes`

    some enter for `technique`

its called "stage"at the high end places,.,.,

but some special ones with dedication an minds like sponges move so frequently at such a young age,.,

marco masterd this by 27. lucky to be trusted. luck is a graciuos gift,.

he has a god given talent, which he certanly shared.,.,

  • @acebackman1 well said, r u a chef yourself? get back to me..please, i would be interested to chat on her.. happy days ;)

  • Comment removed

  • @sethHesio Marco was the same way probably even worse than ramsay. On camera, he's not going to get mad at his staff and treat them they way he normally does. He use to physically assalt them and attack them emotionally. Ramsay is the way he is cuz of marco anyway so I dont see how you can favour one over the other...

  • so long spent on the garnish, but he Knows this..=/

  • Gordon is a good cook but Marco is genius, IMO.

  • @drgonz0id both got 3 michelin stars, marco is just much more cooler than gordon.

  • @TomValedro Marco also received his stars in a different era than Gordon. As you most likely know, Marco was the first Brit and, at the time, the youngest chef to receive 3 Michelin stars. When Ramsay reached 3 stars, about a decade after MPW, it was more acceptable for Michelin to award their highest honor to chefs outside France. I don't want to mitigate Ramsay's accomplishments but I think you have to take the context into account if using the stars as a basis of comparison.

  • @TomValedro Just to add: Gordon is obviously talented. No matter what year one receives 3 Michelin stars, it's still a massive deal and for an elite few chefs. You don't get to that level without being very, very good. However, and this is just my opinion, MPW was more of an innovator and more knowledgeable. That's something I feel when he conveys such knowledge. I've never heard Gordon speak on a equivalent level - ever. It's those things, beyond the accolades, that separate the two for me.

  • @drgonz0id As a Chef I like well documented and informed comments, yours is one.

I will say this Gordon and MPW are in 2 levels , entirely apart ,one is a good student (GR) the other a prodigy (MPW) ,The shark has forgotten more than Ramsay will ever learn ,I say this with lots of respect for GR, but the truth is the truth.

GR is shock value, is fake tits while MPW is the devil went down to Georgia and found his ass in MPW hands.

  • @ElmaCannonPrieto As a foodie, I appreciate your compliments and insight :-). I don't want to take away from GR either, and I have much respect for the man as well, but I agree with your comments. To me, MPW's food is like a Rembrandt painting and GR's is like a really amazing forgery. From far away the forgery looks exactly the same, but the closer you approach it, the more you notice the tiny imperfections in the brush strokes and detail.

  • @drgonz0id well said..

    thank for your informed words.

  • @drgonz0id I definitely agree with you. You look at some of Gordon's foods and presentation are based on Marco's recipe and presentation. The only thing different is Gordon make those recipe more complicated while Marco kept it simple and straight forward!!!

  • @drgonz0id I definitely agree with you. You look at Gordon's foods and presentation are almost identical to Marco's. The only difference is Gordon make those more complicated while Marco makes it simple and straight forward!! Even the Goddamn plates are the same. Gordon can't never beat Marco no matter how many Michelin star he has.

  • OH.MY.GOD.

  • Marco is the man, gordon is just a fucking drama queen

  • @StyrbjornStarke I agree, Gordon is a weak cook, that's why he only runs the pass. He is no where close to the level of Marco. Also, Gordon is only famous for his bully boy antics, people seem to like him belittling like the Romans liked gladiators killing for entertainment.

  • @hallnoats4ever

Do you have any evidence at all to back up your arguments?

  • Marco is one of the few people Gordon doesn't act a twat around. He still is like a son around him.

  • o0h gosh.....he is so sexy.

  • "taste, taste, taste!"

(And if that doesn't do the job, just a little extra bit of hair by Marco will surely do the job... mwuahaha....)

  • Marco Pierre White and Gordon Ramsay- TWO GREAT CHEFS

  • Which year is this?

  • @StyrbjornStarke Around 87 or 88

  • @StyrbjornStarke He is 27 here so must be 88.. he was born Dec 61.

  • I can see why Gordon is the master he is today, just looking at him, how observant and patient he is, he follows Marco's every move without questioning his brilliance, just epic to watch ^_^

  • is that gordon in the background?

  • @zgescuro Yes it is Gordon.

  • Can I ask you guys a question?

The dish is a "mil fois" (sp?) of sweetbreads. What does that mean and how is it spelt?

  • @TheDave000 - Mille-feuille (millefeuille, mille feuille) means literally a "thousand leaf". Basically it's made up of many thin layers.

  • @TheDave000 It's spelt mille fueille. Mille being French for thousand, and feuille being French for sheets, or leaves or layers.

  • what he means by alive- isnt that it techincally has organisms that are living and breathing. what he MEANS is that as a cook- you have to respect its dynamism- its variance- its temper. you have to knead it like your making love to it- and then bake it like its incubating. saying it is alive is a way of marco paying it respect and reverence. That it needs care, timing, and love , just as a living thing does.

some of you dont understand his meaning- thats why hes a great artist- and youre not.

  • young gordon!

  • haha i find it humorous that anybody corrects what marco said about yeast and flour being alive. cause at the end of the day, he's the one who had the michelin stars. so pretty much if he says its alive, he's right hah.

  • Comment removed

  • Comment removed

  • ooo nice caramel cage

  • wheat is dried before milling... so it's definitely not alive...

  • True. But yeast most definitely is alive... that's the joy of bread. Every day its different depending on the temperature of the kitchen, the flour, the water, etc.

  • Dried yeast is dried, therefore it's not alive?

  • you're right, dormant--- same goes for beans. depends how dry it gets and what it is, of course. but, wheat is also milled.

but after you bake bread, the yeast is dead, and so is the wheat-- even if you used live, sprouted unmilled wheat... too hot to survive.

  • @stevensartifacts Uhh I think Wheat isn't alive.. im not sure.

  • @SethHesio No it just makes it go dormant, Yeast doesn't have to be moist to be alive. Yay for Dry Active Yeast.

  • talented? yes. an artist? yes.

but holy shit is he an unpleasant person.

  • Robert de Niro?

  • He needs a hair net...

  • wat did he say when there was the censoring bleep?

  • Comment removed

  • @eymatt778

    I'm pretty sure he said;

"I looked fucked! you know that? I look so rough it's unreal"

  • he hasn't aged well at all has he?

  • none of them do. stress and steam dont mix

  • @bachboy111 i kind of think he has.

  • @bachboy111 the result of constant chain smoking and the personality of a surreal murderer

  • @bachboy111 try working as a chef, it's not all air conditioning and coffee breaks. Being a chef definately affects your appearance, mainly from the long nights. Also the stress. I'm not talking about being a chef in a diner or pub, I mean a chef in quality restaurant where people are spending top dollars and expect top dollar food.

  • @landis69 i do work as a chef, and not just in a pub either....i've worked at scaramouche, rundles, avalon and canoe ( in toronto)... it wasn't a comment about the workload, just the way he looks.

  • @bachboy111

consider the 100+hour work weeks for 10 years straight with the stress he has endured and you'd understand why he looks the way he does haha

  • @bachboy111 He's 27/28 here.. he looks like he's 40! Of course he hasn't aged well.

  • @bachboy111 That's cigerattes for you

  • @bachboy111 cooks rarely do

  • Flour is a living thing. I love the way he tries to make everything he says so profound.

  • the 80's plating is so goofy xD

  • "Half Italian, Half Yorkshire" Haha is that not half English then?

  • he's a LEGEND godfather of cooking

  • Who is that pastry Chef?!

  • patrick

  • 'you love it that way'... you slag

  • Dont think i could ever it veal bollocks. Although marco makes them look very nice for Pierre.

  • good job he's not cooking bollocks then innit

  • they are glans from the neck, they are actually amazing.

  • i enjoy watching marco cook. unlike gordan

  • Marco's focus is on the food, while Gordon's is on disciplining his cooks.

  • I'm pretty sure that to get 3 stars, you've got to dish out some discipline.

  • you can't differentiate that way. Both are obsessive about the food. Both have the unrelenting drive for perfection. Ramsay learnt a lot from White, you could claim his aggression is from Marco, or maybe his finesse- the fact is the former trained and backed the latter, therefore they must share some attributes. But you can't attribute Marco's success to a less aggressive attitude than Gordon's. Read about it.

  • ramsays aggressions surpasses whites, it is a trait special to his character only. white doesnt need to shout and eff and blind to the high heavens to make you work....he just gives you that look with an assertive tongue and youll bend over backwards for him. so in some way white is better at controlling his emotions than ramsay, yet still yielding an equally superior service

  • Surpasses? Hardly. Ramsay does all that for TV, not in the actual kitchen. Sure, head chefs yell all the time but they're not like Marco. Marco's been known to throw glasses, bottles, pots and pans filled with hot liquid in them at his underlings for not following instruction and/or messing up. A commis complaining about heat in the kitchen? He cuts out a big hole on the guy's uniform. An unruly customer marching towards him? Gets punched in the face.
