  • I just made potato pancakes this morning (before I even saw this video) and I make them pretty much the same way. I always use shredded raw potato and then to the potato shreds I add an egg, salt & pepper and a few tablespoons of flour. I mix it all up together, then fry them as patties and they're fabulous. I've never let them soak in water first and they still come out fantastic so I'm not sure what the point of that is. But anyway, they're wonderful.

  • @Linda7647 it's to remove the starch and reduce the formation of acrylamide. When starch is cooked at very high temperature (frying, roasting, broiling) will produce this compound call acrylamide which is harmful to health and may cause cancer.

  • @puypui84 because the moisture will not allow the potatoes to stick. They need to stick to keep their shape.

  • I made this tonight! I chopped up some bacon, fried it till starting to crisp then added it to the mixture as well. Had them with some chilli relish and they were great!

  • Thank you Chef John ! This is one of my favorites from know on! By the way, in the mix I added some tomato sause, just a little bit, and it gave the the potatoes a nice redish look, and also a great seasoning.

  • If u have one, u can shred ur peeled potatoes & onions in a food processor. If u have a salad spinner (its used to spin dry washed leafy greens) put in ur shredded potatoes & spin it till u don't see any water come out. After, combine with the egg & flour mixture. Its easier than having to squeeze by hand. Made some homemade apple butter to go with this & it tasted wonderful! Slapped it between a biscut...even better! Anyways put whatever u like with it. Homemade applesauce is geat as well.

  • this is a great recipe for potato pancakes. I went crazy for these when I was a kid. A lot of folks are saying these are hash browns. Well let me tell you they are not! Close but no cigar. Hash browns are good and all, I love em. But potato pancakes are the bomb! W/applesauce and sour cream.

  • When you soak grated onions and potatoes that long in the water, don't you wash out all the nutrients?

  • Nice variation on an a 45 year old family favorite. You used the best spuds too. Also nice with canned tuna mixed in b4 cooking.

  • yep, I'd say that is the first, CORRECT, recipe for latkes I've seen in a while. Why people try to make them like a patty, instead of grating, I have no idea. They are the best this way, my family always makes them this way. And the flour and egg is very important, the ratios of each are hard to get perfect though. Good job Chef

  • If you have a computer with a simple video editor like Windows Movie Maker (Actually I think Youtube has one) you can cut out the unimportant scenes to move things along and save time on your videos. Pretty simple to use.

  • Chef I would recommend you put them in a pan (use non-stick spray first) --- I believe they will be 10x healthier and same consistent flavor.

  • @MsCrunchyCookie I think you're right. I (and Mom!) always made them with left-over mashed potatoes and egg. Fry 'em until edges are nice and crispy. Yum!!

    Say whatever, I would prefer THESE pancakes over normal pancakes. Why? Because making normal pancakes is hell. A little here and there in measurements and your pancakes are RUINED.

  • I just grate my potatos right in the egg mixture, no need for water or pressing. I just mix as I go, add onion and fry. If you make a lot, then you need the water technique.

  • This is right. :) While I make it more confusing by add too much water instead of egg york. Therefore, the mixture looks watery and never stick like this. :) Finally still finish them. It is good idea to mix with one onion, but, make sure you have to squeeze them because onion and potato all have water in, and add a little baken soda will be more crispy and tastey than this. If you do not eat any eggs. :)

  • @82blastoff, I would assume it is to keep them from oxidizing by keeping them underwater until you're finished peeling everything.  But I could be wrong.
