Great recipe! What was the name of that cooking technique? Pualay? I googled and couldt come up with anything. It works great! Ive always had really bad luck pan searing fish, it always dried out. But this last part of basting with the oil/butter/herbs was easy and kept everything really juicy :)
So if anyone knows what he said at 2:57 I would appreciate it :)
I have made this 3 or 4 times and love it. I have also used Chilean Sea Bass and it works amazingly for that as well. It is so easy and smells great in the kitchen.

We just had another rockfish pulled out of Lake Michigan yesterday (Racine). It was 10 years old and named Willie! Damn invasive species are terrible.

Good recipe... but that ain't rockfish. It looks more like striped bass.

@GhostPirate6 LOL. Real rockfish aren't rockfish until they hit the water. Prior to becoming rockfish, they will probably kill you with a .38.
