Thanks for your friendship invite. I have good news for you, if incase you don't already know & probably do. We have had very good luck with leaving our parsnips over winter they get so much sweeter. We have -40-48 degrees centigrade in winter + windchill. I now want to experiment with carrots & beets maybe a few others. Onion also keep over but similar to parsnip you must harvest soon in spring unless you eat the stalk. This means parsnip at least is an important staple in cold climates!
