@EvelcyclopS True, but the people he's filleting the fish for would probably rather wait 30 seconds for 80% of the meat than the extra ten minutes for all of it, and if your customers aren't happy, you go out of business.
Along with that, being that this is his job and the pay is per day not per hour, he's getting paid the same amount regardless of how fast he goes, so at the end of the day this is the best way for him to earn his check.
good filleting - I wouldn't have thought of a bottom to top fillet and top to bottom on the other side. Only a small nick into the gut cavity. If he'd taken a bit more time the would have been top marks
