I already knew this actually. you have to think about how the game is programmed. The models only switch when the camera changes to another location.

When Vanitas "puts on" the mask, it only shows his mask afterward, but if the model switched, then there would be a fraction of a second in which the model would disappear.  Square Enix cuts corners like that to reduce animation and make more space in the game.

Though you still have to wonder how he fits all of his hair in there.
