@bruqedoral You may have added your butter while the meringue was still hot. After adding the sugar syrup to the egg whites you have to let it completely cool down or else, like she said, it will melt the butter. You also need to carefully add in the sugar syrup. In the video it almost looks like she dumped the whole thing in at once due to the way it was edited. The syrup should be added in a VERY slow and steady stream so that you don't break your meringue. Hope that helps!
The white icing before adding the butter is also great itself. If you don't want to add that amount of butter, you can omit it. It's really great and tastes like melted marshmallows :> I've been using it for a long time and never gets tired of the flavor!
@ThePinkrose33 nope 6 sticks of butter is 3 pounds. 1 stick of butter is 8 ounces and 16 ounces is a pound so 8oz (1 stick) plus 8oz (1 stick) equals 16 oz ( 2 sticks) which is 1 pound
allisonphuise1996: the same thing happened to me the first time. I didn't let it cool enough before adding the butter. I guess it melted. I tried again, waiting until it was really cooled off before I put the butter in and it worked great. It does go a bit soupy at first, but keep going and it will turn out.
