I imagine they use a fourier transform to convert the sound into its component frequencies, remove everything not used by the human voice, and then convert it back again.

As for software to automate the process... I have no idea.

highly unlikely, to many frequencys are shared by both the vocals and the instruments. This isolation is to perfect for that.

Looking at the interwebnets, it seems to somehow take advantage of the volume of the vocals being equal in each channel - maybe they also do each channel separately, and keep the minimum frequency from each, so that if something can only be heard in one, it gets removed.

Sometimes you can isolate/remove parts of a song by inverting/combining the track/channel phase, however you can usually tell when these types of techniques are used since the quality is noticeably lower... apparently these songs are made by Microsoft officially so my guess is they just license the original vocal recording and use it in the project.
