Wow, you peel everything! I don't peel any of my vegetables (well except the onion of course) for Ratatouille. If you don't peel the vegetables it looks so much more vibrant and colorful and it tastes great (so the peeling certainly is not necessary... unless you have a really bitter eggplant).
I also add some cheese to the top and bake for the last 15 minutes. I know this is not traditional, but it is oh so good!

I've never tried cooking before but the thought of mixing and creating to make something good sounds intriguing, I would love to try this dish so thank you for the instructions. If you can could you possibly inform me how to prepare other french cuisine?
