just use an emitter with a sensor switch set to speed. Then have the sensor above were you want your sackboy to stop. so when he comes and hits the jet back Bubbles/float material spawn up. Then spawn up really quickly then slow down. Giving it the effect of air escaping then there being none of it left.

I simulated it by adding a Glass-material at the front layer, connected to moving winches.
