  • Lancaster is not pronounced "LanCASter" with the "N" sound and the short "A" sound in the middle. It's more like "LANGkister".

  • Speaking about foreign flavors, I wish he would do an episode about Sichuan peppers. I never can get anything right when I use them.

  • He should have used an Anarchy flag.

  • oh my goodness, Alton is the most genius cook ever. :D

  • I admit I was raised on a fair share of Taiwanese and Chinese cooking. But none-the-less I am still American, and it's a shame we, as a nation, ignore our culinary heritage and become polluted by the foreign cuisine. No, it's okay to enjoy exotic food, but it's also okay to sit down and enjoy food that is uniquely American! /wave USA Flag in background

  • I gotta get me that 1962 The Joy of Cooking book.

  • Me too, I wanna see this squirrel business.

  • @GutsBatman You might find it on Amazon, I'm not sure if it's still in print but Amazon is a great place to find older books.

  • @GutsBatman

Where does he mention that book?

  • @discogirl222

At about 1:35 where he mentioned skinning a squirrel.

  • @jwwc123

    Thanks !

  • the Pennsylvania dutch name is actually reserved in some communities ONLY for the Amish and Mennonite.

  • When he boils the eggs, he doesn't use my favorite trick... use a thumbtack to prick a tiny hole in the large end of the egg before boiling. This takes care of that pesky bubble, and makes for better yolks once the egg is cooked. DO IT, PEOPLE!!

  • Define "better"...

  • i am so happy to see alton use maille mustard, not that grey poop he has greeked into his shows previously. about time he got it right...that's real dijon, not that over-processed shite.

  • This has bothered me in SO many episodes... Pennsylvania Dutch ARE NOT AMISH. NOT MENNONITE.

    Get it right, AB.

  • W. T. F.

Is that knife he's using to cut the bacon really a SCIMITAR? Doesn't look as slender as the ones I've seen in prints.

  • Lol No it's a butchers knife. Clevers are just clevers and aren't used much for butchering. That big boy is was pro butchers use. My ex worked in the meat industry and had one of those...she called it "Big Boy"...scary...
