  • Dear Chef John, If you want to shoot at night with high quality light, you need to invest in proper lighting for video. Look up the Westcott TD5 Medium Day Light Kit -- Its a continuous light source and it comes with s softbox. It'lll basically recreate window light in your kitchen at night time! Set your white balance for "daylight" balance when you're using this type of thing. Food always looks better back lit, so place the softbox behind your food when filming. Hope that helps!

  • I don't know why but brie tastes really bad to me. It tastes like one those anesthesia masks, if you ever had surgery before you know what I'm talking about. It made me gag. I wish I could enjoy the great taste that everyone talks about. I think it's because my taste buds are not use to the taste.

  • This kicked off our foodwishes 3 course meal tonight and it was a total hit. The combination of brie, ripe pear, and cracked black was sensational!

  • when i did this instead of brie i used vintage cheddar and a little honey instead of pepper it was orgasmic

  • I just made this... sorta. I used what I had on hand: a ritz cracker, ripe pear, shards of real parmigiano-reggiano cheese, and fresh black pepper. Amazing. It's that "party in my mouth" feeling. The sweet fruit, the tangy & salty cheese, spicy blast of the black pepper, and the texture of the cracker all hit you at once.

    I made one without black pepper just to try it and it wasn't anywhere near as exciting as the original. Well done, Chef!

  • I can't believe I've only just tried Brie for the first time today. It's standard supermarket stuff, but it's delicious. I can't wait to try some authentic real Brie, I bet it's amazing.

  • I did this, but could not find a really ripe pear. So used some thin sliced pineapple and it was AWESOME.... Even the 4 year oild ate it.

  • Reminds me of a similar recipe I made. Brie on french bread, toasted in a buttery skillet with fresh ground pepper. Make sure the brie really gets caramelized.

  • In Italy pears and cheese go always along, in fact there is a popular proverb that says: " Al contadino non fare sapere, quanto e' buono il formaggio con le pere". Which means: " don't let know the farmer how good is the cheese with the pear."

    We do ravioli stuffed with pear and dress them with gorgonzola, that is a blue cheese. Keep it up chef!

  • @seanskull No brother this is a type of cheese. hahah it's made from Milk, the white on the outside you see is actually a type of mold that can be eaten. Its a very nice cheese, try it!

  • the best pear to eat with this cheese comes from my country, "Rocha Pear", it's a bit harder than the other pears and has a unique taste ...

    I've tried it before but without the cracker and the black pepper...I' sure it adds additional taste to this simple recipe...and Chef John, every excuse is good to make us a video!!!

  • Brie is awesome. Unfortunately many people make the classic mistake of buying it, and keeping it in a (too) cold fridge till they eat it, and it's way too immature (what's that called?) and hard...

    Brie is supposed to be soft, and have built up a little flavor and body. Now, if you leave it for too long, it starts to be like how we eat cheese in Denmark :)

    THAT looked like an awesome snack, Chef John, totally gonna try that one day!
