The reason it looks like it gushed out was because of the shadow/reflection made by one of the crew. Watch how the blood gets dark as soon as he moves to the right of the boat at 0:40. Look how different parts of the blood get lighter and darker as he moves back and forth. Its just his shadow/reflection.
It looks like a sand tiger (NOT a tiger) shark. Sand tigers are also called ragged tooth and grey nurse sharks, depending on the country you're in. They're not known to be super aggressive.
Yeah it's Henri Bource. I went to school with his son (who is Henri as well). He's a household name in Brighton but, unfortunately, he died of cancer a few years back. A lovely man.
@bladesharks Bource is an amateur underwater photographer and filmmaker, and a few years later, he took the original film footage from the attack and reconstructed the other parts for a documentary called "Savage Shadows."
