I'm putting on my shoes and heading to the store for some ingredients right now - can't wait. Thanks for the inspiration.

Oh man, loved the idea but the sanitation is pretty bad here. Jack, you rubbed the meat then picked up the salt bowl (and then the container to refill!) without washing your hands. As a trained cook, that's definitely not something I'd teach.

I made this, and maybe I put too much salt on mine, but it was pretty salty. Tastes good just need some water to go with it! Next time going to do some more black pepper and less salt.
@xizeroone - If you are grilling a steak, YES, when you make biltong, no! Biltong fat doesn't taste good, nor does it improve the process in anyway. Biltong is made with the leanest cuts possible. Keep in mind it is designed to be stored long term, so removing as much moisture as possible is how you do that. Further fats that are not kept cool go rancid quickly. So yea, I have no "beef" with fat when cooking/grilling but it is the enemy of long term storage.
@survivalpodcasting As a Afrikaaner I can say that fatty biltong is one of life's greatest pleasures :) too much fat...and its kak, but just the right amount...hoog heilige fok, its so good :) but as suggested you need to eat the fattiest bits quickly if you plan to leave it outside, but i assure you, that those bits will be gone the quickest :P but if you plan to keep it long term, put it in cling wrap and chuck in cool dry place, or in the fridge. The word for a US Dollar; a 'buck' came from when in the Old West, a universal price of an animal skin, or a buck, was $1. Nice video, I'm South African and it's nice to see other countries enjoying our food.
Nice video Jack! I have a friend in the US that is forever asking me to bring him biltong... I was over there in June for the first time and I'm sorry to say that jerky just doesn't compare (no offence).
I loved America even more than I thought I would, so I'm sure I'll be back soon - if I end up near you I'll bring you some of the best biltong you'll ever eat! :)

Fat also doesn't preserve well, it holds moisture and will most likely turn rancid.

Table salt would perserve as well.
Its been used for centuries in various cultures to perserve meats. It shouldnt be a problem.
