  • Thanks Chef John. I grew up in Boston and these beans are very similar to what I ate as a kid. I tend to put a lot more spices and a bunch of other stuff up in it :)

  • I always have to watch videos of people cooking yummy food because all my parents cook is bland meat, steamed rice, and vegetables, always sauteed, ALWAYS.

  • @chocolatecrackcookie It's about what you choose to EAT. Not what you choose to make. I'm perfectly healthy sized, but I think it's nice to indulge every once in a while, and these videos are a good place to choose something. A lot of Americans are overweight because they were either raised on an unhealthy diet and made it part of their lifestyle, or they're too busy with something else or uninformed to care about the nutritional value of what they put in their bodies.

  • @cay311 Well I tried to swap swine for muslim but I found muslim to be rigid, tough and hard to swallow never mind digest....so I went back to swine......imagine that!!....I prefer pigs to muslims!!!

  • Love your recipes, but for the baked beans I prefer my mom's. She uses the white beans, onions, yellow mustard, smoked pork, salt, pepper and her secret ingredient a bottle of Dow beer. She bakes it overnight and we used to eat them on Sunday morning. Delicious !!!

    P.S. Easy way to clean that pot, add one used dryer sheet, let sit for 10 min. and scrub with dryer sheets, all that stuck food comes right off! (always re wash with soap and water)

  • I've had fresh cooked baked beans before and they taste absolutely delicious compared to a commercial can version. I find this your method interesting chef. Especially at the final part where you remove the top of pot and just to let the pot broil for a bit. Usually it can be served without the broil but your method gives the beans a wild kick to it. NICE!!

  • Well we made this and it came out great. We also had stuffed cabbage. Suffice to say the whole house sounded liker the Boston Pops Orchestra all night. Hiyyoooooo!

  • The baking soda should be added when you soak it overnight to tenderize it and make it cook faster.

    just thought i'd say, i asked my grandma, she's from turkey. she told me.

  • baking soda helps softening and also promotes browning (being alkaline)

    however, adding salt at the beginning will prolong

    cooking time, since it hardens the beans.

    do try to add salt after beans are soften.

  • Are dutch ovens needed if you're going to cook in a regular oven?

    I did some research and I learned that dutch ovens were originally for outdoor use. That would explain the thickness of the pot.

  • An oven-safe pot may work ok, depending on the metal and how thick it is, but dutch ovens are just as good inside a regular oven as they are for cooking outdoors, so it's by no means unnecessary. If you have a dutch oven I'd recommend that you use it, if not don't feel pressured to go out and get one, though.

  • Few things are truly necessary, but Dutch ovens provide some advantages.

    You can go from stove to oven. Not all pots have oven safe handles.

    The thick metal is good for absorbing energy. For you this means a more level temperatures even though oven temps fluctuate.

    Fewer hot spots, promoting even cooking.

    Dutch ovens are thick because they are cast iron. I have yet to see a thin piece of cast iron. That mass is what let's it hold energy.
