Folding does not make it stronger, it's done for looks anymore. The true Japanese swords made in Japan are folded to distribute the carbon in the steel. If folding is done incorrectly it can make weak areas in the blade. And the middle part of your katana is known as the Tsuba . You seem to have forgotten the name. Anyway back to the blade , folding looks great but really not needed because modern steel is so good now. Very nice katanas you have good taste.
Oh ya it's not a blood groove its a BO-HI to lighten the blade and make it faster.
