There is a nearly dead art called Bartitsu. It was known as the "gentlemanly" form of fighting and combined several forms of martial arts, including (I think) Wing Chun. I am pretty sure that is the fighting style he uses in the books but they probably adapted it a bit for the movie since Robert Downey Jr. has quite a bit of experience in Wing Chun.

Someone asked me how this scene was accomplished. The production used the Vision Research Phantom HD Gold camera, which can film at speeds faster than 1000 frames per second in HD resolution. Played back at a normal 24fps makes for extreme slow motion. The "normal speed" shots were also completed on the Phantom, and in fact some of the shots are actually the same image, with extra frames removed to shift the speed out of slow motion. The punches were all real, accentuated by the frame rate.

Wing Chun? In the books he was simply an expert boxer. He had an adequate knowledge of anatomy. This plus Holmes' quick thinking allowed him to quickly figure out where to hit, what to hit with, and what to predict from his opponent. The moves shown here may possibly have been influenced by a martial arts film choreographer with Wing Chun experience, but Sherlock Holmes as a character is definitely a boxer.
