If I remember correctly, was it not foretold earlier in the movie that evil would initially triumph over good (hence, the centaur defeating the griffin) before good would triumph in the end? This scene teaches the audience (with a focus on children) a number of things: we need to be patient and faithful when things initially look dark, there are certain bad things that are fated to happen, and that the griffin had to die so that the audience would be even more happy when Sinbad kills the centaur

This scene always annoyed me as to why sinbad never helped out the griffin? i mean after all was not the griffin their to protect them? as the centur was slowly strangling the griffin instead of them just standing their watching the poor creature get brutally murdered sinbad could have ran up behind the centur and slashed out the centurs back legs so the rest of his men could have ganged up on it to finish its disgusting existence off but thank god it died screaming bleeding in agony =)

While my sympathy of course lies with the griffin, and maybe I am putting too much logic into a movie, it has to be reminded that the centaur is half human: thus, even though he gets help from the evil wizard while the griffin starts off strongly, alas, the centaur would have used his superior intelligence to put away the poor, unfortunate griffin. (Notice how poorly he does against the thinking power of his fully human opponents).
