I'm not sure but I don't think so. Finishing the battle earlier would save you more time and allow you to get Z-points faster. I could be wrong on this tho

well you don't have much control after you've sent the opponent flying but you can use your Wii remote to determine which way you want to knock your opponent when doing a smash attack that sends them flying.

For example, if you want to hit them down, raise the Wii remote up and swing it down when smash attack's fully charged. If you want to hit the opponent left swing the Wii remote right and swing it left once you want to hit the opponent.

Right the two main buttons for almost all defensive manoeuvrings are pushing A+B simultaneously. If you go to tutorials on ultimate training, it gives you a list of most of them. The easiest deflecting maneuver is pressing A+B and shaking the Wii remote sideways when an enemy does a rapid fire "B" attack (Ki attack) everything else (teleporting) is pushing B at the right time. The timing is really hard to get and takes a lot of practice. Try looking in the tutorials section.

Well those are my attack options, but I didn't use kaio-ken attack on purpose.

The Wii Controls are designed that when you charge Ki you can do the movements with the remote which can lead to the attack that you're choosing.
