@theramenninja Yes, you can substitute with vegetables, different varieties of mushrooms, or roasted tofu. There are vegetarian options in the recipe on my website. Please watch "how to roast tofu" to easily roast tofu in the oven.
@theramenninja I think you are referring to fishcakes. You could add it but I would recommend shrimp instead. But if you do want to add fishcakes, I would first boil them in water, drain and cut. Then saute with soy sauce, garlic, sugar, and black pepper.
@NotJustRice Firm tofu can be roasted to give it more texture and flavor. How to roast in the oven and Japchae-Vegetarian version can be found on my website.
@theramenninja try it with sliced firm tofu. it comes out alright.... not better than beef but its good as well.just dont use smooth tofu or it will crumble all over the dish when mixed.

Sorry for the late reply. I tried to make it the first time and it didn't work out. But following your method it turned out amazing. Thanks so much. Everyone loved it.
I made this recipe yesterday(practice prior to mothers day). They all like it ,they even took some....lunch for work. Now my brothers coworkers wants me to teach them how to make it!Passed my first Korean dish :)Thanks!!!
@megbc8 I am so glad the dish turned out so well. JapChae is one of our friend's favorite dish too. You are so thoughtful to prepare ahead. Your Mom is very lucky to have you!
Looks delicious. I'll be trying this tonight.
