@oimrairs Hi there, of course you can use fresh spinach, as spinach releases liquid, its best to blanch the spinach and squeeze out the excess liquid before making this recipe. Hope you give it a try, and please do let me know how you like it.

@flintrocks You can make sure the eggs are fully cooked by when the yoke is hard, if your going to mix it with the spinach, then just continue to cook until the egg looks like it is cooked through. Hope this helps. Mariette

You can cover the pan with a lid while cooking the eggs. Once the yolks are firm, the eggs are fully cooked.
