I would guess having them so high is so that on stage his bigger motions, to reach them, help draw attention to him? Over the years, he's probably too adjusted to the height to change it even when he's just doing studio work. It makes him look a lot more intense as well, his movements have to travel farther, so he has to move faster and in some beats harder....*shrugs.*
