In a busy casino with the loud noises it is possible that the normal mics didn't pick up the audio when she first said it so they had her say it again with another mic therefore making it sound different then the rest of the audio. This kind of thing happens all the time, not only magic videos.

And to know it's the queen of diamonds - He runs through the deck and ask her to think of a card. The card just before the queen of diamond is cut half way so that the queen can be seen just slightly a little longer than the rest of the cards. Then he have a lot of black cards before the quees so that the mind registre the red card. Red Queens or Kings is the easiest to see
