  • let me say this youre doing it al wrong you need to whisk in 8 form not in to a circle and you need to add the water en lemon juice before you beat your egg yougs on the fire your eggs will coagulate and then if you have a elastic mass pull it off the fire keep whisking for a 3 a 4 min of the fire on a towel then you wil add the cleared butter and then will you have a perfect hollandaise sauce
