He looks old in SPN because they age him up for John Winchester. They age him 10 yrs for John, so that there are 20 yrs between John and Dean as opposed to the 12 between JDM and Jensen. They did this so they could age him down for the Pilot and wee-chester eps but also age up for scenes with the boys, and still have it be believable.
