  • @brianpl0x no chocolate 60% cocoa mass good quality (sometimes costs around $11 just for that kind of chocolate).

  • A great way to get air into this type of cake, is to separate the eggs and beat the egg yolks into the mixture and then whip the egg whites into soft peaks. Fold the egg white mixture into the yolk / cocoa / sugar mixture, and there you go - a ligther, airier version of this cake.

    It actually uses quite a bit of sugar, you can do the recipe with a bit less, but you sort of need the sugar because there is no flour. The sugar becomes the binding agent - if you lower the sugar, add a bit of flour, otherwise the cake loses body.

  • @filmranger Thanks, I'm making it for Thanksgiving and I think I'd like it lighter instead of so dense. I'm going to add coffee to flavor or possibly almond or vanilla. Have you made this?

    Remeber, it's a really dark chocolate cake - so vanilla helps make the flavour more rounded, but the actual vanilla flavour gets lost, as would coffee. Almond is always good, or a little Grand Marnier or orange flavouring to cut through the richness of the chocolate. Also, don't cook it for quite so long, but leave it in the oven to cool as the oven cools - this seems to stop it from falling, because this type of cake, if you take it out of the hot oven, can fall a bit.

  • One of the Jewish teachers at my school made this and brought it in during Passover last year when she could not eat any flour, and it was absolutely delicious. One small slice was enough to satisfy my chocolate cravings for a week.

  • Hi. What do you think about beating the yolks with the chocolate or maybe if the chocolate wants to separate only with the sugar to get more volume (a la sabayon) and then adding beaten egg whites to get even more volume?
