there is something i don't get about omurice...why do they stir the egg mixture like if they wanted to scramble the eggs instead of just letting it cook flat? just some random doubt :/
@Neohin my guess is to cook the rest of egg on the top since if you just cook it flat, the bottom will turn brown by the time the rest of the egg is cooked.
