  • Mmm, my Dad's been asking for a carrot cake. He keeps telling me it'd just be easier to use a box mix, but my Dad deserves better than that. XD So, how well does this cake rise and what would the cooking time happen to be if I were to put it into two round 9" pans?

  • @SakuraCourageSolo Yes, he definitely deserves homemade and trust me, he will loooove it (and you) so much for that! You can certainly make it in 9' pans...you could bake it for 30-35 minutes and then check it with a tester to see if it's done in the centre. If it's goopy, just give it another 5 minutes and check again. Nothing says love like home baking! :) Let me know how it all turns out!

  • @a1angiem FINALLY got around to making this and my Dad absolutely LOVED it! The only thing I did differently was omit the raisins because he likes to save those for his Brown Sugar Oatmeal. XD Thanks so much for a divine recipe! It was tasty, moist and had an excellent rise! Thank you, God Bless!

  • @ukpkmkk oh yuck, no it's cream cheese, butter and sugar. I have a video posted (see, it says that above in the info section, but you'll have to search my channel for it)...it's sooo good!

  • If you have a juicer, and after making carrot juice, you can also use the remaining pulp.

  • Thank you, I love this cake recipe and notice the difference a recipe using honey instead of white sugar sugar makes in the taste.

    BTW.. my husband is thrilled with all of the recipes I have found from you!

  • I don't know but I suppose you could...maybe check a substitution cooking website - not sure if it is cup for cup...but the honey really does add a nice flavour - you can subtly taste it - so give it a try. I just used no-name honey.

  • I love carrot cake. It looks so yummy. Have you ever tried replacing the oil with apple sauce? That would reduce the fat intake. I use apple sauce in cakes or corn bread & can't tell the difference in texture or taste. The measurement is the same as whatever is called for the oil. I don't know how it works but it does.
