    We make it in coconut milk.. it turns all velvety and totally different tasting.

    I love potato skins and almost always leave those on. The yucca skin, however, is much thicker ---more similiar to a bark than a skin. Yucca should not be eaten raw and the skin always removed before cooking, this helps remove toxins that can be harmful to the digestive system. I would describe the skin as "inedible" --but it is easily removed with a knife.

    it's funny....the yucca compares to the potato, but I've never even thought to try it with butter ---maybe I've been too busy with the olive oil.

    The consistency of yucca makes it a better fit for this recipe, I think. The fibrous quality of the root gives it more resilience than a tater. Not that I'm saying taters are weak, 'cause they're not. They're strong. But it's more of a mental strength. I think a potato would do much better than yucca in jail, or a hostage crisis.

    If you like olive oil and garlic---it's a fantastic dish. If not, then you might give plain yucca a try. It's VERY similiar to a potato, but makes a nice change in the starch department.

    You should try it fried it's super good... after boiling it just fry it in some peanut oil. It's like french fries only tastier.

  • @LiveAndLetDice It's a very popular root in Latin America and Africa. I haven't had a problem finding it in the US. It's available at many grocery stores, fresh and frozen. I often buy the frozen yucca and don't fool around with the cutting and peeling. It's a staple at most Cuban restaurants.
