It will depend on the features and APIs that the app is using though.
There are new widgets (UI elements) more finger friendly than in Maemo 4, kinetic scrolling, etc, but generally this is simple changes in code from the old ones.
Even Maemo 4 apps could run in Maemo 5 just recompiling it, but the interface could look bad and not be usable with fingers.
Also, the most of the games in Maemo 4 (SDL based) will run in Maemo 5 just recompiling it.
