I think the hole on the side of the mold is a release hole from the vacuum created when you press the moon cake inside the mold, it releases easier .

She does not tell you all the ingredients and measurements for each to make a fillings. She just shows you how to make dumpling and who does not figure it out so easily. That is not cool. Asian people never reveal the true techniques in cooking for anyone. I am not surprised. This video is a waste of time for watching.
