Of course evenly matched fighter in real life fights are rare, so the asynchronously choreographed scenes tend to be more realistic, but this does not eliminate the validity of synchronous scenes, since it can and does occasionally happen that way in real life as well.

Of course some of Bruce's and Sonny's fight were synchronous style as well due to more evenly matched partners like Chuck in that famous scene between him and Bruce, but generally most of their fight scenes tended to match them against lesser fighters, whereas most of the Hong Kong RunRun Shaw flicks have many characters with fairly equal skills, so it looks like dancing. I reality of course some fight do look like this when two masters are evenly matched and anticipate moves from each other.

In those fight scenes with different skill levels they tend to show the fighters in arhythmic, asynchronous fights (many great Bruce Lee and Sonny Chiba scenes show this type of variance because before the late 70's they tended to copy real life fighting more) whereas since the late 70's it became fashionable to show very evenly matched fighters in a "dance". Jet Li and Jackie have taken it back a bit to more realism though lately.
