Dylan's music has always been open to interpretation. Listen to the coffee shop exchange again, and realize that once he sized her up, she became an instant 'memory.' I am fully aware of there are other parts of the song that reference other things. My comment was on that very short exchange in the diner, that's all.
@DylanGirl63 I think he meant, "I'm outta here" it's the funniest line in the song....The waitress introduced the eggs and the concept of asking what he wanted has been borrowed and expanded upon brilliantly. It's full of regret and resignation with a few one liners thrown in as usual. The Highlands are his ideal but something stops him from settling anywhere. I can empathize with his reference to coveting "norms". It takes a worried man.........

Once he realized how vapid she was, he just broke her chops ~ "Bring me a hard-boiled egg" (like her), the stick figure he drew of her, and how he answered her complain "That don't look a thing like me" ... as soon as she left, he 'slid out of the chair' and split, so he knew what he was doing. When he had enough, he left.
Long, but Dylan's a modern day troubador who tells stories through his songs... I love the way he blew off the clueless waitress. "I don't do sketches from memory..." He's the master of musical 'tell-off' lines. The last 4 lines of Positively 4th Street are sheer brilliance.
I would have just up and left once she said "We ain't got any [eggs], ya picked the wrong time to come." Way I see it, Bob was being charitable by sticking around and drawing her.
