things like the lungs are attached to the ribs so you do need to cut some stuff out. As a rule though, cut it as little as possible because then you run less of a risk of leaving stuff in there
Those birds were about 2 years old, and they were EE's..so not very big. They were eating just normal layer pellets..but if we are raising them for meat, they eat a food with a much higher protien percentage, around 26-28%.

You do need to cut off the anal gland, and around the vent, when the intestines come out.
