@TweakFingers You need to set the camera to either manual (M), or shutter priority mode (S). Once you're back in record mode you can use the joystick to control the shutter. If you don't see the shutter indicator you need to go back into the menu and reselect it. It's kind of clunky to be honest, but it works.
