That egg was called duck eggs. In Chinese we bury the eggs in a large crock that's been layered and lined with garden soil, and then store in a cool dry place for 3-4 months. And putting ingredients include a blend of equal parts of ash from charcoal, pine wood, and fireplace, along with salt and strong black tea. And cut in wedges and serve with sweet pickled vegetables or a sauce of vinegar, soy sauce, rice wine, and minced ginger. Yum!!! It totally delicious!!!

this is obviously not the best century egg, the best one has a runny yolk and softer "white" (or should be "black"), it really tastes so different and good with pickled ginger or vinegar with cucumber. Try a REAL STYLED century egg next time before mocking at those traditional food.

I love century eggs, and we DON'T eat it alone. Usually with pickled ginger or in porridge. (And it's not rotten, same concept as soaking eggs in salt water, just preserves it) Unlike all the other richer countries around the world, we asians had to make do with these to pass through hard times.

It does have an earthy flavor, but cat litter? Really? LOL I once bought some of these b/c my students had pestered me all semester about trying something "strange and exotic." Just to be sure I wouldn't poison them, I ate one beforehand. The egg is black and the yolk green but really does taste like a regular egg with some kind of mineral/organic aftertaste, but it was the texture that got to me. The middle is a thick, viscous paste that's really creamy...and green. Blech!

It requires a certain acquired taste to appreciate it, but it balances the taste of the dish it adorns. it is safe as the black color is just a food color or dye that was mixed in the clay that wrapped the egg to preserve it.

And the egg isn't supposed to be black; the yolk is a dark green, cream-like substance with a strong odor of sulphur and ammonia, while the white is a dark brown, transparent jelly.
