You're not hitting a "height ceiling." You're stalling the jet. It happens at any altitude when you hold the air breaks, or retard the throttle to long, when your nose isn't pointed down to keep your air speed up high enough to create lift. Next time try and nose down or wing over to get your air speed back up and you'll pull out of the stall much sooner then simply falling. Otherwise, damned nice piloting!
