alt u can also just use the normal masalas at home. we always vary the dish with what we have - sometimes fry onions instead of mustard seeds, sometimes no onions or mustard seeds, sometimes we add leftover roti or even sabzi (veges) or frozen peas/carrots.
the masala we use is salt chili and turmeric dhana/jeeru powder varying between chili powder whole red chili or chopped green chillies and a bit of lemon juice for the tartness. Basically whatever u have to hand there is no standard recipe!

Hi, I had a question that came to my mind when i saw you crackling mustard seeds - what do you do to get rid of the strong smell it leaves behind? I leave the exhaust on for a long time, and use candles etc, but during winters it is impossible to leave the door open. Any suggestions on how to get rid of the strong smells?

You can use garam masala but chana masala has many more ingredients such as mango powder, chat masala, etc.

You can boil some vinegar and water in a pot and let it keep simmering. It helps to absorb some of the smells.
